It's nearing the end of summer and it's hard to believe that many kids have already gone back to school. Zucchini Bread
When your garden yields colossal zucchinis, your hands are forced and you must come up with some recipes to put your crop to good use. Admittedly, with zucchini this large, I was worried that the size would sacrifice the flavor. A few summers ago, we picked a 22" zucchini and when we tried to use it in a few recipes, it had little to no taste and was full of water. Our garden is so overgrown, it’s quite embarrassing. It looks as though it hasn't been maintained for months, and it has. Zucchini Bread
Today is apparently National Zucchini Bread Day. I am not sure who dedicated this day to my favorite green veggie, nor have I seen it marked on any printed calendars but, who cares. It gives me an excuse to bake one of my favorite breads (aside from Mom’s Banana Chocolate Chip Loaf). My go to fail safe recipe for Zucchini Bread is always taken from Sheila Lukin’s Silver Palate.
