Today I decided to recreate a COMPOST COOKIE recipe that was inspired by Christina Tosi, head pastry chef from celebrated Momofuku Milk Bar in NYC. I adore the delicate, buttery taste of shortbread cookies. My favorites are the Royal Shortbread cookies which are handsomely dipped in milk chocolate on one end. Up until a few years ago, I had never bothered to bake any version. Sadly, I had only purchased them in stores around holiday time. Last week, I participated in the 3rd Annual Great Food Blogger Cookie swap hosted by The Little Kitchen and Love and Olive Oil. Shortbread cookies are traditionally associated with Christmastime. Even though we don't observe Christmas, this Jew has been to plenty of Christmas "tree trimming" parties where poinsettas and tinsel decorate the room and egg nog and shortbread cookies complete the table.
