I can’t take credit for these amazing bundles of eggy goodness. My sister-in-law introduced them to me and I always say, when you see or taste a good thing, there's nothing wrong with copying it! In fact, she had me work her frittata assembly line. She gave me the task of filling the tins with sun dried tomatoes, feta and spinach and then watched me carefully ladle the whisked eggs into each tin. Mother’s Day: Kale Frittata
Mother’s Day was a big deal in my family when I was growing up. In retrospect, it's interesting that we attempted to “gift” my mother through a homemade meal. We would make breakfast and surprise her with breakfast in bed. Obviously, after the first year it wasn’t a surprise anymore. Wednesday nights are the coveted breakfast for dinner nights in our house. Zucchini and Cheese Frittata
Summer is around the corner. It’s getting warm outside. With the sticky weather, I’ve been searching for light, refreshing dishes to make for my family.
