This week we resumed our Wednesday night Breakfast-for-Dinner ritual. We’re trying to get back into many of the routines that were forgotten over summer vacation. I decided to adapt one of Mom’s quiche recipes. My kids have loved all the other egg-based dishes I’ve made (calling them egg pies) so, I figured I’d experiment with a Chicken Asparagus Quiche. Potato Chip Chicken
I've had such a busy week with back to reality, back to school, the STRUT FASHIONABLE MOM SHOW and everything in between. Having time to prepare an involved dinner was just not in my cards. Pistachio-Crusted Chicken Breasts w/Raspberry Sauce
For me, there’s no better bonding opportunity than by cooking alongside my big sister; especially when we’re recreating one of Mom’s recipes. Whenever I’m with my dad and my sister (together )I constantly feel the intensity of the loss of my mom. This weekend I was with my dad and my sister so, Mom's absence followed me everywhere. But, I’m still determined to fill that overwhelming void with memories enhanced by her food. As luck would have it, my sister suggested we recreate one of Mom’s celebrated recipes that her family … [Read more...]
