Apparently, the other day was National Zucchini Day. I'm not sure who actually coins these days. Are they officially on the calendar? I think not but, we were happy to celebrate in our own way. Calling all soup eaters, or non-soup eaters.... Have you tried gazpacho this summer? I sure hope so. Just recently I posted one of Seriously Soupy's seriously tasty Mango Gazpacho soup recipes. I've made it 3 times since and have "wowed" my friends. Since then, I've become obsessed with Gazpacho. Light, easy dishes go hand in hand with the hot, humid days of summer. Fish Tacos w/Spicy Tomato Cucumber Salsa are ideal. Not only have my kids discovered a new love for Tilapia this year but, any dish containing the word “taco” ranks high-- it’s fun for them to build their own tacos with all of the fixings as they love taking ownership of their meals (which happens very infrequently). It’s my favorite day of the month, I get to reveal my Secret Recipe Club assignment for July. I’m honored to be a part of this diverse international group of food bloggers.
