Turkey Tortilla Lasagna

Back to school means back to early morning alarm clocks, full schedules, homework arguments, and later nights.  For us, dinner is the only time we can sit down as a family and catch each other up on the events of our respective day. Mini Frittatas

Wednesday nights are the coveted breakfast for dinner nights in our house.  While the idea of eating pancakes for dinner has lost some of its intrigue this past year, I was excited to kick off the 2nd season of breakfast for dinner with a new recipe I tried last weekend: Mini Frittatas. Turkey Burgers

This week both of my children FINALLY started school.     Summer is officially OVER.  Although, the ninety-degree heat the last few days was certainly a big tease.  Now that I’m getting back into the groove of meal planning for the entire week, I’m definitely trying to diversify our options.  I have many awesome grilling recipes from this summer’s menu rotation that simply can’t be replicated to peak perfection on a small, indoor stove top and oven range.
