Meyer Lemon Tea Cakes w/ Pomegranate Glaze

The other day, while waiting to pick up my son from school, I looked down in the trashcan and found a crumpled up recipe for Meyer Lemon Tea Cakes in the pile of rubbish.  I’m convinced that my radar to detect recipes is always on its highest frequency these days.  Funny enough, the recipe was tattered and stained, quite like most of my mom’s authentic ones.  And, while I’m sure a bunch of elementary kids made the treat as an afterschool project, the kid in me couldn’t wait to go home and bake.

I’ve made Mom’s Lemon Squares that were a big hit with the kids.  They were very tangy and goey in the center with the consistency of an undercooked triple fudge brownie.  This tea cake recipe uses crème fraiche that creates little muffin-sized cakes that are quite dense. While it’s such a versatile ingredient in the kitchen, I’ve never cooked with creme fraiche before. I’ve now learned that it can be classified somewhere between yogurt and sour cream.  Its flavor is rich and its texture is very creamy; it’s often used as a substitute to yogurt and sour cream.

I love that you can make these cakes in a cupcake tin, without the liners.  I did have to go out to purchase some Pomegranate juice for the glaze but, after baking, I’m not sure it’s necessary.  Powdered sugar and lemon juice would suit the cakes just fine!

After only 18 minutes of baking, your tea cakes should be baked to perfection.  Mine popped out of the tins easily and, after they’ve cooled, a simple swirl in the glaze adds a delicately sweet coating to the top.

This recipe made 36 tea cakes which we took to a weekend brunch, to school, as a snack for a class field trips, etc.  In other words, get ready for lots of mini cakes.  If packaged in an airtight container, they should stay fresh for up to 4 days.
