Thanksgiving Apple Cinnamon Coffee Cake

Today it’s the Secret Recipe Club reveal day.

I’m honored to be a part of this diverse international group of food bloggers.  In case you forgot, everyone in the Secret Recipe Club gets “assigned” a blog from which we are supposed to pick a dish to cook.  But, it’s all done in secrecy.  It isn’t until the ultimate reveal day (today) that everyone showcases the dishes and discovers who’s been their secret foodie link.  This club has provided me valuable exposure to blogs I might not otherwise encounter.

My November assignment was K&K  Test Kitchen. Most meaningful to me is the fact that K&K Test Kitchen started out as a collaboration between daughter, Kelsey, and mom, Kim.  The blog was created to ignite experimentation in the kitchen featuring recipes focused on quality, common ingredients.  K&K Test Kitchen is bursting with a wide variety of recipes and accompanying food photography that will please the healthiest to the most indulgent followers.

I was thrilled to finally get my chance to test out one of K&K’s recipes since my blog was their assignment last February and they baked Mom’s most celebrated recipe: Mom’s Banana Chocolate Chip Loaf.  While I earmarked a ton of recipes on the K&K blog, like Spinach Turkey Meatballs and Peach Bruschetta & Watermelon Salsa, I knew I wanted to bake something timely for the Thanksgiving table.  I discovered their Apple Cinnamon Coffee Cake and was set. To me, there’s nothing better than the warm comforting smells of apples and cinnamon wafting throughout every nook of my apartment on a cold November day.

This bundt cake is beyond easy to make.  It reminds me my Quick and Easy Coffee Cake recipe but, it is a lot denser.  In fact, the batter to this cake is soo sticky, you really need to spread it around your pan with a spatula as you’re creating the cake’s layers.  Additionally, I wasn’t sure of the bake time so I baked it on 375 degree for approximately 70 minutes.

My kids loved the cake mainly because of the delicious soft-baked apples.  I used Honey Crisp, my favorite variety, and I also added a dusting of melted butter to them as well. In hindsight, I would recommend adding extra apples and cinnamon into the layers so the cake’s sweetness will offset its denseness.

It’s three days later and we’re still enjoying the cake; for breakfast, lunch and dinner (gulp).

I’m actually excited to bake this recipe again on Thanksgiving morning and to share it with my extended family.
