This week Serena shares her homemade Parsnip, Leek and Apple Soup which couldn’t make me happier. With schools starting and summer officially over, I’ve got apples on the brain. September and October are always my months of apple picking and apple experimentation. And, as luck would have it, until now, I’ve never made, nor sampled Parsnip, Leek, and Apple Soup…
Here’s what Serena has to say:
Fall is upon us, and during this time I love to experiment with root vegetables.
I love making simple soup recipe with parsnips, leeks, and apples that is packed with fiber, vitamin C, and antioxidants.
This delicious and healthy fall soup is a great way to use ingredients that you likely have at home; it also takes virtually no time to cook.
The result was a silky and creamy soup that is perfect celebration of the upcoming crisp fall days.
Parsnip, Leek, and Apple Soup
Ingredients:
- 2 parsnips, cut up
- 2 cups of water
- 1 gala apple, cut up (leave skins)
- 1 leek, cut up
- ¼ cup light heavy whipping cream
- ½ yellow onion, cut up
- 2 cloves of garlic, minced
- pinch of salt
- pinch of pepper
- pinch of celery salt
Instructions:
- Add water to a pot and start boiling on a low flame.
- Add the chopped up garlic and onion to the pot, along with the cut up parsnip, leek and apple.
- Cover and let cook for 15-20 minutes.
- Add the cream, salt, pepper, and celery salt. Blend, taste (may need to add more pepper), and enjoy!

I have never even cooked parsnips before in my life! what do they taste like? I love leeks and apples so I’m guessing I would like this recipe…I came over from NapTime creations link up, I’m excited to see more of your creations.
